Structure Coffee Roasters

Structure Coffee Roasters opened its Rue McGill location in Old Montreal as a roastery first and cafe second, built around a stated commitment to visiting producers in person and trading with them directly rather than through importers. The espresso and filter programs are kept separate, with blends developed for milk drinks and a rotating set of single origin coffees meant to be tasted on their own.

The room leans minimalist, concrete floors and pale wood counters with vinyl playing over the speakers rather than a curated coffee shop playlist. It draws a mix of Old Montreal office workers on their way in and coffee people making a specific trip for the roast. Beans are sold by the bag in the shop and online, along with a subscription and a separate program built for offices and businesses.
