Founded in 2009 by four sisters in Milan's former-industrial Tortona/Solari design district, Sevengrams operates less like a cafe and more like a coffee studio in the literal sense — retail counter, in-house micro-roastery ('Lot Zero'), tasting bar, and SCA-certified training courses all under one roof. It's one of the more education-forward specialty coffee operations in this guide, built for people who want to learn the craft, not just drink the result.

A second, newer Coffee Studio location on Corso Venezia extends the format elsewhere in the city, but Via Valparaiso remains the original. Open weekdays only, closed entirely on weekends — an unusual schedule for a cafe, but a logical one for a space built around courses and trade visits as much as retail.
