June Collective is run by Mythila and Ilze, who built its seasonal, globally accented menu on genuinely well traveled kitchen resumes. Mythila trained at Le Cordon Bleu in San Francisco and worked stints at Noma 2.0 in Copenhagen, Hiša Franko in Slovenia, Gaggan in Bangkok, and kitchens in Madrid and San Francisco before landing in Milan, including time at Loste Café. Ilze, from Latvia, spent years in hospitality and fashion in Vancouver, London, and Copenhagen and helped shape Loste Café's branding and social presence before the two of them opened their own place together.

The kitchen sources deliberately small, traceable ingredients, fregola from a Sardinian farm, flour from a mill in the Marche, eggs and meat from named producers, built into a menu that runs from homemade granola and cardamom pancakes to shakshuka and a bread pudding built around parmesan fondue. Coffee runs a full specialty range, espresso, flat white, filter, cold brew, chai latte, and a Vietnamese iced latte alongside fresh juices and natural wine. The original Certosa District location inside La Forgiatura is currently closed, and this Via Galvano Fiamma address is the one now open, walk ins only, no reservations.
