Federico Maggiulli opened Il Cafetero in September 2019 after a decade in restaurants and four years spent studying specialty coffee, choosing a residential stretch of Quarto Oggiaro well outside Milan's usual coffee map. Ivon Romero, who grew up around coffee in Colombia and has lived in Italy for more than 25 years, joined him in telling the shop's story after a 2018 V60 brought back memories of her grandmother's coffee. The name nods directly to her heritage: cafetero is Colombian Spanish for a coffee grower or coffee man.

Federico began roasting the shop's own coffee himself in 2023, closing the loop from green bean to cup on a Giesen roaster, and the shop now runs a small wholesale and training side alongside the café. Regulars come for the brioche and a rotating single origin list as much as the espresso, with both indoor and outdoor seating on Via Rembrandt. It opens early most days, Wednesday through Monday, and closes entirely on Tuesdays.
