Clandestino non esiste is Onest's spinoff, opened by the same founders, Lea Pedrinella and Lorenza Licciardello, in January 2023 inside a former neighborhood hardware store in Lambrate, a corner of Milan where the pace still runs slower than the rest of the city. Architects Annalisa Grasselli and Matteo Rota kept the room's original bones while adding color, including a mural by street artist Nico189 built around the United Nations Sustainable Development Goals.
Pastry chefs Matteo Andreotti and Laura Onofrio work long, deliberately slow doughs, fermentations that run 24 to 48 hours and hydration levels of at least 75 percent, turning out two bakes a day of croissants, tartlets, plumcake, and savory focaccia and sandwiches alongside the loaves. Specialty coffee here is built for filter rather than a full espresso program, meant to be sipped alongside whatever just came out of the oven. There is essentially nowhere to sit, this is a takeaway forward bakery counter, open Tuesday to Friday with a midday break and shorter weekend hours, closed Monday.
