Emilio Irias comes from a three generation Honduran coffee farming family and has lived in Miami since age twelve, spending roughly seven years helping small and medium Honduran growers reach specialty market buyers directly before opening this Upper Buena Vista room. What started as an online only beans business grew into a physical coffee lab combining farming, roasting and brewing under one roof.
Beans are grown on family and partner fincas in Honduras, organically hand picked, imported green, and roasted here in Miami every other day to stay close to peak freshness. A full manual brew program runs Chemex, Clever, V60, siphon and drip service alongside standard espresso, a range that treats brewing method as seriously as the sourcing story behind the beans.
