Cafeología is a coffee research and education project from San Cristóbal de las Casas in Chiapas, working across production, roasting, tasting and training with growers in the highlands, and this Coyoacán bar is its first shop in Mexico City. The compact room of about fifty square metres draws its textures from San Cristóbal and sits a short walk from the Casa Azul.

The bar leans toward filter coffee and espresso, with cold brew, infusions and traditional Chiapas drinks as well. Bags of beans carry the face of the grower who produced them, and there are a handful of green tables inside and a bench on the sidewalk outside.
