Jimmy Tjoeng, Kael Sahely and Matt Sahely started Vacation as an unnamed wholesale roastery in Cremorne in 2016, then opened a ten seat espresso bar the following year under a heritage building at the corner of Exhibition and Flinders Streets. The room leans into its name with pastel green and pink walls, tall ceilings and a view toward Flinders Street Station and the MCG, a deliberately relaxed contrast to the office towers surrounding it.

The roastery has since moved to Richmond, and Vacation has landed on the World's 100 Best Coffee Shops list two years running, 71st in 2025 and 100th in 2026. The CBD counter keeps a short list of toasties alongside the espresso and filter menu, and the beans, packaged in the same pastel branding, have become a popular gift for visitors passing through.
