Pétrin Couchette

Pétrin Couchette opened in April 2022 on Cours Saint Louis near the Noailles market, a project from the team behind La Mercerie and Livingston, with Julia Mitton, Harry Cummins and Laura Vidal among the founders. The name translates loosely to kneader sleeper, a nod to the long fermentation the bakery's sourdough goes through overnight before it comes out of the oven each morning.
Bread is the backbone of the place, naturally leavened loaves, pita, foccacia and bao all get filled for sandwiches that change daily, but the coffee program runs alongside it rather than as an afterthought, pulling espresso and filter from The Barn in Berlin. Cold brew comes out through summer, oat milk is available for a small extra charge, and the pastry case rotates with the season.
