Gallien opened La Tisserie in the Saint Lambert neighborhood in autumn 2021, trading a career as a specialized educator for a coffee project built around the same idea, putting people first. The workshop on Rue d'Endoume roasts on site, sourcing arabica grown at high altitude on small family farms with an emphasis on traceability back to the growers themselves.

A shared table sits at the center of the room, meant to get strangers talking rather than heads down over laptops, while staff walk customers through the current lineup of beans by taste rather than just pointing at a menu. Espresso, pour over and a rotating iced coffee and matcha selection are the draws, with bags of the week's roast lined up for anyone who wants to take the coffee home.
