Partners Nicky Hampton and Nikolaous Vouis built their first joint venture around two obsessions, specialty coffee and Mediterranean cooking, aiming for a high end coffee shop that skipped the high end price tag. The menu blends British and Greek sensibilities, leaning toward vegetables with meat or fish as more of a flourish than the main event, aimed in part at flexitarians without saying so directly.
Coffee comes through a partnership with Buxton Coffee Roasters, who work directly with farmers and prioritize sustainable and ethical sourcing, while most other supplies come from firms across the north of England as part of a deliberate effort to support similarly minded businesses. The Princess Street space runs on a compact, consistent daily schedule that closes by mid afternoon every day of the week.
