Pastora

The lit Pastora sign on a plaster wall above the counter, with a barista seen from behind, a coffee grinder, an espresso machine and jars

Sara Pastor and Juan Camilo Díaz run Pastora as a modern take on the botillería, the old Spanish shop that sold drinks to take home or enjoy on the spot. Díaz's family grows coffee on La Noria farm in Tolima, Colombia, and that coffee is roasted in Madrid under the La Noria Coffee Project name, so every cup can be traced back to the farm it came from.

The room is tiny, built around a counter and shelves of natural wines from small producers, craft beers and pantry goods from nearby makers. Bags of the house coffee sit among them, so the same beans can go home with you. It works as a quick stop on the way to El Rastro just as well as a slower pause in La Latina.
