Martín Tostador

Martín Tostador is a roastery and coffee bar in one room on Calle de Moratines, where the roaster sits right beside the counter and the smell of fresh roasting drifts out onto the street on roasting days. Camilo, a Colombian barista, runs the project with a curious, research minded streak, and the shelves carry bagged single origins such as an Aricha from Ethiopia and a Caixa de Frutas from Brazil, with Colombia, Guatemala and Myanmar also in the farmer lineup. The coffee served at the counter comes from beans roasted a few steps away.
The room is bright and airy, with tall windows, white arches, black columns and a long counter stacked with bags and cookies. Toasts sit alongside the coffee, and the shop welcomes anyone curious to learn how the beans are chosen and roasted, with the whole process explained on its website.
