Cientotreintagrados

The dark green shopfront of Cientotreintagrados with its Pan and Café sign, warm lit windows of bread and pastries, and a chalkboard on the pavement

Cientotreintagrados began in 2017 on Calle de Fernando el Católico, started by Alberto, who moved from cinema into pastry school in San Francisco, and Guido, who picked up specialty coffee while living in Barcelona, London, Amsterdam and Berlin. It was the first specialty roastery in Madrid to share its room with a bakery. The coffee is traceable and chosen at origin, from Colombia and Ethiopia to Kenya, and roasted on an omni profile that works for both espresso and filter.

This is still the shop where the roasting happens, close to the counter, just as in the early months when the oven and the roaster sat in the middle of the room. The bread and pastries now come each morning from the larger bakery on Calle de Sánchez Pacheco, made with sourdough and slow fermentation. Beans are sold by the bag in a range of grinds, and the team also runs courses and tastings for anyone who wants to brew better at home.
