Cafés Guayacán

Cafés Guayacán opened in 2014 and calls itself Madrid's first roaster dedicated entirely to specialty coffee. It is a family project shaped by more than twenty years of visits to the coffee town of Jardín in Antioquia, Colombia, and that Colombian thread runs through everything from the sourcing to the welcome. Beans are selected, roasted in Madrid and sold in bags, with recent lots from Kenya and Ethiopia such as Pibe, Yirga and Kele.
The counter is open to the room, so you can watch your coffee being made, and the shop is as much a classroom as a cafe. Guests can book a Barista for a Day session, a tasting built around the five senses or a workshop on why coffee tastes the way it does, all led by the family team. The doors are open from Thursday to Sunday, which makes it an easy long weekend stop in Chamberí.
