Former professional cyclist Brian Megens and Shivani Achrekar opened the first Fixed Gear Coffee in nearby Valkenburg in August 2018, after Megens grew disillusioned with pro cycling and, moving to Maastricht to study, found no specialty coffee anywhere in the region. This city centre room followed as the second location, run on the same philosophy of avoiding bitter, over roasted coffee, with espresso pulled on a Kees van der Westen Mirage Idrocompresso lever machine.

Beans come from Amsterdam's Friedhats and Eindhoven's Sprout Coffee Roasters, poured alongside homemade vegan cakes, and the shop still leans on its cycling roots, co branded apparel with Santini and a Coffee Before Cycling tagline running through the branding. Beans are sold both by the cup and to take home for anyone brewing at their own kitchen counter.
