Éric Pinson has spent twenty three years in artisan food and drink, bringing that experience from the Paris area to open his own chocolate shop and cafe in Lyon's sixth district in December 2022. The store honors his father and grandfather's recipes, with his father still working alongside him on the floor.

Deliberately few seats keep the focus on Pinson's own interactions with customers, guiding them past chocolate bars and already bagged single origins from El Salvador's Usulután, Colombia's Aratoca, and Nicaragua's Nueva Segovia toward a Victoria Arduino espresso machine and an onyx black Giesen roaster tucked beneath a suspended prism of hanging pendant lights. It's a shop built around authenticity over polish, Pinson holding out a fresh bag of beans for anyone who wants to smell it before ordering.
