Tohm Ifergan opened the original Dayglow in Silver Lake in 2017 with his cousin, building a menu that leans toward craft cocktail presentation rather than a straightforward espresso list, the Hotel Chevalier among the drinks that built the shop's reputation. Rather than settling on a single house roaster, the counter runs an expanding, rotating roster of outside roasters, a curatorial approach that has become the brand's signature.

The Silver Lake room remains the flagship even as Dayglow has grown into West Hollywood, Venice, Chicago and Brooklyn, plus a planned Chinatown location paired with a beer concept, evidence that the format built here has genuinely traveled rather than staying a one time idea.
