Dayglow

Tohm Ifergan and his cousin Philippe started Dayglow in Silver Lake as a single cafe meant to grow with its community, and their first customers were a young couple from Paris staying upstairs, who ordered a cappuccino made with coffee from the French roaster Belleville. The brand's line is that it does not push coffee, it curates it.

Rather than settling on one house roaster, the counter runs a rotating roster of outside roasters, and coffees are presented by flavor notes so choosing is easier. The menu leans toward craft cocktail style presentation, with the Hotel Chevalier among the drinks that built its reputation. The Silver Lake room remains the original, and Dayglow has since added rooms in West Hollywood and Venice.
