Rosslyn Coffee

Mat Russell and James Hennebry met working together at Caravan and opened the first Rosslyn on Queen Victoria Street in 2018, building it with no outside investment and real personal sacrifice on both sides. The name traces back to Rosslyn Street in West Melbourne, where Hennebry first learned to pull a shot, and the pair set out to pair Australian consistency with Irish pub warmth. The company has since grown to ten City of London sites, but this original stays the reference.

B Corp certified Origin Coffee supplies the house beans, delivered in reusable tins rather than disposable bags, a choice Rosslyn says keeps over thirty thousand bags a year out of landfill. Beyond the house blend, an Off Menu program runs rare micro lots vacuum sealed and frozen, ground only to order, alongside a rotating guest pour over. It runs as a high volume takeaway counter, standing room and window bar only, built for a quick coffee rather than a long stay.
