Colonna & Small's

Maxwell and Lesley Colonna-Dashwood discovered third wave coffee in Melbourne in 2008, then opened their destination cafe, Colonna & Small's, in Bath in 2009, building their own roastery in 2015 to control sourcing and flavor from bean to cup. Maxwell went on to win the UK Barista Championship three times, and the Bath shop was named best coffee shop in Europe in 2016. Leather Lane, opened in 2023, is only the brand's second cafe.

Staff guide the counter through a conversation led format rather than a fixed drinks list, three rotating filter and espresso choices plus split shot comparisons, with rare lots vacuum sealed and frozen for later service, a technique tied to research the company has published on frozen grinding and water chemistry. The narrow room runs on bar and counter seating built for that kind of guided tasting rather than settling in.
