Assembly Coffee launched in 2015 as the headline sponsor of the first Coffee Masters competition at the London Coffee Festival, the culmination of conversations that had started the year before between Volcano Coffee Works, an established south London roaster, and some of the city's leading specialty cafes and restaurants. Nick Mabey, a certified Q grader who leads quality for the company, and Michael Cleland built the roastery inside a 19th century former fire station in Brixton, which opened in November 2016 and now turns over more than 500 kilograms of coffee a week on Giesen machines, some of it shipped as far as Ten Belles in Paris.

Door, the retail cafe bolted onto the roastery floor, is run as a joint effort between Assembly and Volcano, pouring straight from the same beans moving through the roaster next door. Assembly is a certified B Corp and works with Colombian growers through the Red Association, a farmer collective, values that show up as much in the sourcing as in the cup.
