Aether Coffee Lab

Aether Coffee Lab is the Canary Wharf home of Aether Coffee Roasters, a Hackney based roaster whose concept was refined through visits to specialty cafes across Europe. The lab serves a rotating list of rare single origin coffees roasted in house, alongside guest coffees from some of Europe's best roasters, brewed as espresso, filter and cold brew. The current collection spans Ethiopia, Kenya and Colombia, in natural, washed and honey processes.

Aether is unusually open about its trade. Each coffee on its website carries the pricing, rating, origin and trade data behind it, and it says a share of its profit goes back to its wholesale partners as part of a push towards fairer, less wasteful coffee. The lab sits on Park Drive in the Canary Wharf estate and opens at weekends as well as on weekdays.
