Raíz Coffee Roasters

Raíz opened on 9 October 2023 on Calle Porta, a quiet street in Miraflores near Huaca Pucllana, and its name, meaning root, says what it is about: giving value to the origin of every coffee. Founder Andrés Pérez runs it with his partner and general manager Adolfo Krugg, and the project is more than a café: it is a roastery, a laboratory and a network of relationships with producers. Tables spill out onto an outdoor patio.

The coffees are roasted in house, with the roastery now based in Surquillo, and the list leans on producers from different regions of Peru. A La Marzocco espresso machine anchors the bar, baristas calibrate each drink with care, and Raíz was named number 54 on the 2026 South America's 100 Best Coffee Shops list.
