Dajo Aertssen opened Cafés Muda on rue d'Arras in 2021 after a path that took him from bar work in Australia to six years at Coffee Makers across town, then nine months among coffee producers in Brazil. He went on to become a double French champion and world vice champion of Cup Tasters in 2019, then took vice champion honors in France's national roasting competition for 2024 and 2025. The name comes from a Portuguese word for a young coffee plant sprout, a small tribute to his time in Brazil.

The shop roasts and sells single origin coffee only, skipping blends entirely, with around fourteen offerings rotating through origins like Ethiopia, Colombia, Peru, Costa Rica and Brazil, each sold with grind options matched to espresso machines, filter cones or moka pots. A small tasting area in back hosts cupping sessions and brewing workshops, regulars get a discount for bringing their own containers, and Aertssen runs a bike delivery service for offices around Lille.
