Coyote Roastery

Yusuke Kadokawa spent two years in El Salvador with the Japan International Cooperation Agency, building relationships with growers in the Chalatenango region that he still buys from directly, shipping the lots straight to this roastery near Demachiyanagi Station. He opened Coyote Roastery in a renovated akiya, a vacant traditional house, in March 2024 with a former colleague named Terada, splitting the work so Terada runs the brewing on a Modbar system while Kadokawa handles importing and roasting. It is the newest and largest of three Coyote branded shops in Kyoto, alongside an earlier location near Kyoto Station and a third near Kiyomizu Gojo.
The name plays on the word's use in the coffee trade for a middleman who connects farmers to exporters, a role Kadokawa has taken on directly rather than through a broker. The shop collaborates locally as much as it sources internationally: cups come from nearby Donoma Studio, and dorayaki, a red bean pancake, is made specially for the roastery by a maker called Wrap. Oat milk and vegan bread are on offer alongside kid friendly drinks like cocoa and juice.
