Coffee Stain

Three siblings opened Coffee Stain in Publika in 2012 and have run every step of the cup themselves ever since. Sylvia travels to farms to buy the beans, her brother Edmund roasts them, and Sam, a barista who has placed highly in national and international championships, leads the bar and chats with the regulars. The name comes from their idea that a stain can be a good thing, a personal and lasting mark left cup by cup.

A refreshed room centres on a Discovery Bar where you can watch the team brew, with a wall map pinpointing the growing regions behind the beans. The single origin list changes every week, so one visit might bring Colombia and the next Guatemala or Ethiopia, and the team knows its farmers by name. Coffee Stain has been named among the World's 100 Best Coffee Shops for 2026.
