Coffee Sapiens has been roasting in Istanbul since 2014, and its Karaköy bar on Kılıç Ali Paşa Mescidi Sokak is one of the neighborhood's smallest and most inviting rooms. The narrow space was rebuilt with architect Asuman Köroğlu around a brick walled counter where guests drink standing up and chat with the barista while the coffee is made in front of them.

The beans are roasted in house on Toper and Giesen machines, and the bar pours espresso drinks alongside V60, Aeropress and siphon brews chosen to bring out each coffee's own aromas. The lane outside is lined with independent shops and a few tables on the street, an easy place to linger over a filter coffee on a Karaköy afternoon.
