Florian Mayrhofer, known to regulars simply as Flo, grew up around coffee through his father Günter's work in the Italian trade, then spent time on farms in Colombia and across Southeast Asia before deciding, while lying in a hammock in Panama, to open his own roastery. He founded unbound in 2017, running the roasting side from a showcase space on Valiergasse while this Anichstraße shop, opened with his partner Sunny, handles the espresso bar and pour over counter in the middle of the city.
The menu leans on the house roasts, blends like Choc'n Brew alongside single origin filter options, brewed by hand or pulled through the espresso machine with proper latte art. Homemade bagels and cakes cover breakfast and lunch in a minimalist white room a short walk from the university clinic, with vegan and gluten free options built into the regular menu rather than treated as an afterthought.
