Birdie Chiu spent a decade in IT before turning to coffee, and the Peel Street shop he built is as much a classroom as a cafe. He is an SCA authorised trainer who has judged the Hong Kong Barista and Siphonist Championships, and the teal fronted room is stacked with Kalita, Hario and Acaia gear, with a shady lane of outdoor tables running along the back.

The beans are sourced and roasted in Kwai Chung every Monday, and since 2018 the team has bought directly from producers, so the shelf turns over through single origins and micro lots from places like Indonesia, Brazil and Ethiopia. At the counter those beans become espresso and pour overs, and the same team runs SCA courses for the next generation of baristas.
