Hummingbird Cafe & Roastery

Tran Hoa, a CQI Q Grader who has judged the Vietnam National Barista Competition, leads Hummingbird, a cafe and roastery in a restored 1950s Indochinese style house down a quiet alley off Vo Thi Sau Street. The owners kept the original symmetrical tiles and wooden furniture, and the bar runs almost half the length of the room.

The team roasts on a 15kg Probat under the Blue in Green Coffee Roasters name, in a style that blends Seoul and Australian approaches to bring out sweetness and mouthfeel while keeping each origin's character. Vietnamese, Ethiopian and Kenyan beans anchor the filter and espresso coffees, and the plant filled terrace looks out over the roastery.
