Think Tank

Markos Xenogianakis and Antonis Kounenos opened Think Tank in 2015 inside a restored neoclassical building on a pedestrian plaza near the Archaeological Museum, billing it as Crete's first true third wave coffee shop. Beans come from Kudu Roasters in Athens, including a house Habit blend and a rotating single origin such as Yirgacheffe, pulled through a San Remo Verona espresso machine and ground on Anfim and Fiorenzato grinders.

By day the counter runs on V60 pour overs, cold brew and the classic Cretan freddo espresso, sweetened where needed with local thyme honey and poured alongside a dozen house blended herbal teas made from wild Cretan herbs. After dark the same room turns into a wine bar with more than fifty labels and a rooftop terrace planted with herbs, so the crowd shifts from laptop workers and tourists by day to a slower evening scene of wine and small plates.
