Third Wave Roastery began as a small roastery and now runs a cafe on Yet Kieu in Hai Ba Trung, on a busy triangular junction in a row of communist era buildings south of the Old Quarter. A Sanremo Verona 3 sits at the end of the counter, and a small team works through the brew methods with whoever sits down.

The beans come from Vietnam and further afield, from full bodied central highlands robusta to Central American gesha and Laotian lots. Manual brews run across V60, Melitta, Kalita and Chemex, and freshly roasted bags are sold to take home.
