BLEND COFFEE Roasters

Blend Coffee Roasters sits just south of Graz's Main Square, on a corner off Herrengasse, in a bright, minimalist room that leans into a laboratory look, white surfaces mixed with grinders, French presses and other roasting gear on open display. Peter Gries, who has worked in hospitality since the 1980s, opened Blend and began drum roasting on site in 2018, building the shop's coffee program around single origin arabica rather than blends aimed at a broad crowd.

The rooftop terrace is the shop's best kept secret, a small suntrap above the street that regulars claim for slow mornings when the weather cooperates. Vegan milk options are standard, the room welcomes dogs, and there is outdoor seating at street level for anyone who would rather watch the corner go by. Beans roasted on site are sold by the bag both in the shop and through Blend's own online store.
