WAY Specialty Coffee Roasters

WAY began as the project of Charlene De Buysere, a World Aeropress Champion and Belgian Barista Champion who turned her competition background into a roastery of her own. Alongside partner Ward De Corte, she set up the operation inside a converted factory building at Dok Noord on the edge of central Ghent, where the roasting drum sits in full view of the bar and the beans travel only a few steps from drum to cup.

The counter runs entirely plant based, pouring espresso and filter coffee from rotating single origin lots alongside vegan pastries baked for the day. Bags of the current roast go home with regulars next to brew gear from names like Hario and Fellow, and staff talk customers through grind and dose for whatever setup they're using at home. The bright, high ceilinged space also hosts WAY's own brewing classes, drawing a steady mix of home brewers and industry regulars through the week.
