Matteo Caruso opened Tazze Pazze in the heart of Genoa's old town in 2017, after training in coffee roasting under Marco Cremonese and Paolo Scimone and completing a stage the year before on a farm in Las Capucas, Honduras. That farm is part of Umami Area Honduras, a sustainability project founded by Andrej Godina, and it still supplies part of the beans Caruso roasts once a month in small batches at the company's own facility, with a traceable supply chain built into the shop from day one. Each monthly batch ships nationwide from the website within days of roasting, timed so customers get the coffee close to its peak.
The counter on Piazza Cinque Lampadi pulls espresso alongside filter coffee and a twelve hour cold brew, served at tables that spill onto the square or inside a room built around breakfast and brunch. Vegan options sit on the menu next to focaccia and pastries, and the shop has landed a spot on Bar Giornale's national top ten every year since 2019 along with a Gambero Rosso mention dating back to 2016.
