Emi Fukahori and Mathieu Theis, a couple who met through coffee competitions, founded MAME in Zurich in 2016. Emi became the first female World Brewers Cup Champion in 2018, and Mathieu has taken the Swiss National Barista Championship three times, a competition pedigree that runs through everything the brand pours.

The Geneva room opened in September 2023 inside the former Voisins Café space, MAME's third location and first outside Zurich, redesigned by local barista Grégory Raymond in a minimalist Scandinavian palette that reuses the original cafe's chairs. Coffee is chosen through a fourteen note aroma wheel and roasted near Zurich, sourced from Brazil, Bolivia, Ethiopia, and Panama, with a cryo frozen milk cappuccino and a tasting flight comparing one bean across three brew methods among the signature pours.
