SimBIOsi Organic Cafè

SimBIOsi Organic Cafè opened in November 2018 on Via dei Ginori, the project of Francesco Nieri, a coffee enthusiast trained under Francesco Sanapo. It sits halfway between a coffee bar and a wine bar, with an all organic outlook that runs from breakfast to after dinner drinks. The coffee list is written like a wine list, naming the blend, roaster, origin and flavour notes, and it launched with beans from Ditta Artigianale, La Tosteria, D612 and Nero Scuro.
Espresso is pulled on a hand lever machine, and slower coffee comes as V60, AeroPress or cold brew. Original medieval walls, contemporary art and vintage chairs and tables give the room its character, and there are seats outside for watching San Lorenzo street life go by.
