FLUID - Specialty Coffee & Sharing

Le Piantagioni del Caffè, a respected Livorno roaster, opened FLUID in May 2022 with Milan consultancy IDEA Food & Beverage behind the design, built around an explicit rejection of burnt, dark roasted, espresso only Italian coffee culture. The counter runs on Modbar systems built by La Marzocco, tucked under the bar rather than towering over it, with more than a fifth of sales going to filter methods like Chemex and V60, an unusually high ratio for a country still built around the espresso shot.

Staff talk customers through origin, roast profile, and extraction method rather than just taking an order, earning the shop its own tagline as the caffetteria for the curious. Food stays secondary, croissants, pastries, cakes, and simple sandwiches, keeping the focus on the cup rather than a full menu.
