Three time Italian barista champion Francesco Sanapo and Patrick Hoffer opened Ditta Artigianale in 2013, building it into Florence's pioneering specialty roaster on a stated policy of total transparency from farm to cup. The Via dei Neri address is the original flagship of what has since grown into a six venue group across Florence and Milan, with a sister location on Via de Carducci running the brand's own Coffee School.
Pour over, cold brew, and three espresso styles run through the day alongside Italian pastries, and the same counter turns into a gin bar once the sun goes down. In 2026 Ditta Artigianale was named Miglior Roaster d'Italia, Italy's best roaster, a title that traces straight back to Sanapo's long push to move the country's espresso culture toward third wave standards.
