Stijn Pijnenburg opened Dodo on the corner of Hortensiastraat and Gerardusplein, in a residential pocket of Eindhoven away from the usual coffee crawl, in a space that reportedly used to smell of nasi before it became a coffee bar and bakery. Fresh viennoiserie, sourdough loaves and focaccia come out of the on site kitchen daily, run alongside espresso and filter poured from BeanBrothers beans, with vegetarian options on the food menu.

No reservations are taken and free parking sits nearby, both practical details for one of the better coffee and bakery combinations in the city, tucked away enough that finding it feels like a genuine discovery rather than a given stop on a coffee crawl.
