Lae, originally from Luang Prabang in Laos, opened Bedrock on the edge of the Old Town after stints at Peter's Yard, Söderberg, and Williams and Johnson, partnering with Todd Johnson, one of the founders of Williams and Johnson in Leith. The West Port shop launched in 2026, drawing on that combined experience from some of the city's more established names.

The menu stays tight on purpose, espresso based drinks alongside a small selection of baked goods and whole beans sold to take home. Minimalist decor and friendly service keep the small room feeling more like a considered edit than a work in progress.
