Corvus Coffee Roasters Uptown

Corvus Coffee Roasters is a Denver roaster built around direct relationships with coffee farmers, many of them going back more than a decade. Its pitch is the new high end of specialty coffee, with experimental fermentations and exotic varieties from producers who are pushing quality. The Uptown cafe on Logan Street sits at the base of the Novel Uptown apartment building and brings that menu to the blocks east of downtown. It held its grand opening in March 2025, with guided tastings and flights of naturally processed Gesha coffees.

It is open every day from seven in the morning to three in the afternoon, a shorter day than the company's other Denver cafes. The entrance is wheelchair accessible.
