Noble Coyote Coffee Roasters

The black metal coyote silhouette sign of Noble Coyote Coffee Roasters hanging from a bracket on the pale blue wall of the roastery, inside concentric rings against bare winter branches and a blue sky

Noble Coyote Coffee Roasters was started in 2011 by Marta and Kevin Sprague, who began at a farmers market and later opened a coffee lab and roastery in Expo Park, near Fair Park. The name turns the word coyote, a middleman who buys low from farmers, on its head: they buy from importers who pay farmers fairly and invest in their lives.

Kevin, a self taught musician, roasts with an ear for rhythm and timing, and the micro roastery has won national recognition. Visitors can order a drink at the bar and choose a bag with help from the staff, and on the first Saturday of each month the lab holds a public cupping where guests taste new coffees and learn about their origins. The lab is open Tuesday to Saturday.
