Lemma Coffee Co (Carrollton)

Lemma Coffee Co was launched in 2017 by Daniel Baum, who roasted in a Denton warehouse, sold at farmers markets and served from a coffee truck before opening this cafe in downtown Carrollton in 2019. It was the company's first brick and mortar shop, a lightly industrial, brick forward room on South Broadway.

Lemma puts producers first, printing the grower's name, altitude, variety and process on its retail bags, and it roasts light, aiming for clarity, with a Typhoon fluid bed roaster added in 2025 beside its Probat drum. The lineup runs from the Overtone blend to single farm lots and experimental microlots, with tasting notes such as peach, jasmine and mango. The cafe is open from seven to seven every day.
