Edison Coffee Co Roastery

Edison Coffee Co is a family run company whose roots go back to a college coffee shop job in College Station in 2004. The first shop opened in Highland Village in 2013, and in 2016 the founders began roasting, which led to a roastery and training lab beside the railroad tracks near old town Lewisville, founded by Melanie and James Edison McWhorter.

The roastery sells single origin lots with tasting notes such as raspberry and champagne or mango and plum, alongside signature blends and a half caff, and it runs public cupping sessions each month. The space is a large, bright room with interior window walls, sliding doors and a coffee table cut from a mesquite tree from the family ranch. The roastery keeps weekday hours.
