Juca Esmanhoto and Hida Lambros opened Rause in November 2011 in Curitiba's historic center, with coffee consultant Otavio Linhares involved at launch, and deliberately skipped a written menu in favor of staff talking guests through the options, a conversation first approach the name reflects, Rause meaning generous in Norwegian. Ownership later passed to Nina Ribas, who came from a background in theater and cultural production, and Daniela Testa.

After thirteen years in its original Centro space, the shop relocated to Batel in November 2024, marking the anniversary with the move. Daniel Busch, a Brazilian latte art champion, has been associated with the shop, and the signature Frape Rause pairs iced coffee with basil.
