Manifesto Café e Torrefação

Manifesto opened in Reboucas in January 2018 with a deliberately social mission built into its name, favoring small and family farm lots over larger commercial suppliers and composting its organic waste on site. The shop describes itself as the first roastery in Brazil to filter the chaff particulates thrown off during roasting rather than letting them disperse into the air, and sells coffee in bulk to cut down on packaging.

The space closed for roughly two years during the pandemic before reopening with in person service, and today pairs its roasting program with cakes and a menu built around the same small producer sourcing philosophy that runs through the coffee.
