Saftig opened in 2024 as a nano roastery from two Copenhagen coffee enthusiasts, and the name, Danish for juicy, sets the tone: light, fruit forward coffees chosen for fermentation character and the specific processing a producer used, treated more like something to taste closely than something to gulp on the way to work. The Nørrebro shop feels less like a polished café chain and more like a friend's living room, vinyl playing behind the bar and a handful of stools for anyone who wants to stay and talk about the coffee rather than just drink it.

Open only Friday through Sunday, the short week keeps the operation small and personal, roasting and serving out of the same room rather than running a full time café. It's an easy stop to build a weekend walk through Nørrebro around, especially for anyone who wants to talk shop with the person who roasted what's in the cup.
