Norange traces back to 2007, when Hellenic Roasting Champion Alex Nerantzis started a roastery called Cafetierra on Corfu before relocating the operation to Copenhagen. Close to two decades of competition roasting experience, including a fourth place finish at the World Coffee Roasting Championship, show up in a menu built entirely around single farm espresso and filter lots rather than a house blend, each one named on a menu board mounted above an antique wooden counter that looks more like a repurposed shop fitting than café furniture.

The Sankt Hans Torv space leans minimalist: polished concrete floor, bare brick, and little else competing with the counter and its pair of grinders for attention. Beans are roasted at a facility on Refshaleøen and sold to take home alongside the drinks, and the sparse seating makes it as much a fast, serious coffee stop as a place to settle in for the afternoon.
