Coffee Collective

The original Coffee Collective, opened in 2008 in a Nørrebro storefront that still looks more like an apartment than a business — big windows, pale wood, not much on the walls. Founded by Klaus Thomsen and Peter Dupont on a promise of full transparency in sourcing, the company still publishes what it pays farmers for each lot, a practice that was unusual in specialty coffee when they started and remains a point of pride now that the company has grown to eight locations across the city. This is the flagship, and the one most likely to have the founders' latest single-origin lot on the board before it reaches the other branches.

Jægersborggade itself has gone from one of Nørrebro's rougher streets to a boutique strip of ceramics shops and natural-wine bars over the same period the café has been open, and Coffee Collective was arguably part of what tipped it that direction. Beans are roasted in-house and sold by the bag alongside branded brewing gear. Come mid-morning on a weekday if you want a seat; weekends draw a line that runs past the neighboring shopfronts.
